At harvest, the industry norm is to place newly dried hop cones into compressed hop bales wrapped in burlap. Those newly minted bales with vine like aromas are then stuffed into a warehouse until the processors find time to finish the job. The time spent in storage, whether days or months exposed to oxygen does nothing to preserve that fresh hop aroma.
While some Brewers prefer a bit of oxidation in their hops as a positive contribution to flavor, a growing part of the aroma market desires a hop as close to “vine like” as possible.
For those discriminating Brewers we meet this need by moving our carefully dried fresh hops (dried at 125°F and shallow beds) directly to a pellet mill and bypass baling entirely. The pelletizer is configured with a bore size and compression ratio to allow production of outstanding pellets at temperatures below the limit at which oxidation is a problem. Though the pellets are carefully compressed, they still will fit into standard industry boxes for shipment. A 5.5mil Mylar foil, vacuum sealed with a nitrogen back flush provide an oxygen free environment to help preserve that harvest fresh aroma.
